Yesterday I received the best present from my Valentine: two boxes of bonbons made by XIV‘s pastry chef Jordan Kahn. Part chef and part chemist, Jordan brilliantly combines ingredients and textures that defy reason, often creating new flavors that are so complex they are hard to guess at. I ate both boxes, two of each candy, yet cannot for the life of me figure out the fillings. I think this one was concord grape and orange blossom but I’m probably totally wrong…

Update: the filling is actually red currant ganache. Way off.
