Chris Behr’s American Menu at Litro February 29

As if to reinforce just how rare such an occasion is, Chef Chris Behr has chosen Monday February 29 to serve a delicious American menu at Litro in Rome’s Monteverde district. A native of New Jersey, Chris is the head chef of the Rome Sustainable Food Project, an initiative founded by Alice Waters at the American Academy in Rome in 2007. Although Chris’s area of focus is Italian cuisine (before moving to Rome in 2012 he worked at A16 and SPQR in San Francsico and Pulino’s and the Brooklyn Larder in NYC), I assure you his American dishes are equally impressive. Here’s what’s on the menu:

Deviled eggs with fried chicken livers
