I am working on creating some new food and wine tours in Rome and southern Italy and I am really excited about “La Cucina Povera: Offal in Rome and Testaccio”. The tour is based in Testaccio, the epicenter for Roman offal cuisine. It will visit the former slaughterhouse, the Testaccio market, and a traditional restaurant to sample offal dishes.
