Millefeuille de Pigeon

Last night at Joséphine Chez Dumonet in Paris, I stepped into the kitchen for a preview of my meal, a squab millefeuille. Here, the chef pours a rich sauce over the legs and the sliced body rests between layers of thin and crispy potatoes.
