Kappacasein's Toasted Cheese Sandwich

There are few things in life that are as soothing as a grilled cheese sandwich. And there are few things on earth that are as delicious as Kappacasein‘s version of this simple delicacy. Their melty cheesy masterpiece consists of shredded Montgomery cheddar, diced onions, garlic, and leeks smashed between poilane sourdough bread. Their stall is literally the only thing that will get me to Borough Market on a weekend (Kappacasein is there Thursday-Saturday). They also sell their cheeses and “Bermondsey Friers” on (most) Saturdays at the Maltby Street Market. However, when I scored the sandwich above at Borough Market this afternoon, I was informed they wouldn’t be there this weekend, as they had run out of cheese. With sandwiches this absolutely perfect, it’s hard to believe they are able to keep any cheese in stock at all.
