Puglia in Tavola

In my humble opinion, Puglia is Italy’s best food destination. It can claim some of the world’s best cheese, bread, pasta and produce. Local traditions continue to be strong here and there is no better way to understand the complex history of this region than to study its cuisine. Here is some of the amazing food I have discovered so far.

    Oh no…I was doing OK with missing the horsemeat, but these photos are to die for. Die. For. And I am avoiding looking at your post from Monopoli (?) for fear of complete meltdown in rainy, work-filled Bologna. The urchins are gorgeous – they look like jewels – if slightly terrifying. How do you even eat? But that charred octopus that comes after?? I am drooling….

    @HH Yes we are far away from tortellini and bolognese here. The deep south has so many culinary options to offer and what’s best, things are simple so the flavors of the ingredients really stand out. To eat the urchins, you have to open them first with a sort of blade that exposes the roe. You can then scoop it out with a spoon or, as we did, scoop it out with pieces of bread. Damn good.
