I make an effort to eat local when I travel but when I saw huevos rancheros on a breakfast menu in Rincón, Puerto Rico, I could hardly pass up this classic Mexican breakfast dish. For me, breakfast has no borders. As long as it is has carbs, protein, dairy, and something fried, I’m sold. Plus, the place was called the English Rose so I wasn’t exactly expecting a typical desayuno puertorriqueño. It is known for its spectacular view–it is located in the hills above Rincón–and hearty breakfasts. My dad got The Full Monty (English breakfast with lots of porky additions) and my stepmom got the Dead Elvis (thick French toast with caramelized bananas). We washed it all down with coffee and freshly squeezed fruit juice then rolled town the mountain to central Rincón.
