I’ve had carciofi on the brain lately. Aside from pizza and bigne’, they are all I can think about. I’ve been really into carciofi alla romana in particular this week. They are carciofi romaneschi braised with olive oil and herbs. You can buy the whole artichoke in any of Rome’s produce markets and trim it yourself, or you can buy them already done like this lovely bunch purchased in the Testaccio Market:
